Another Foody Friday for you guys, and this one is one of my all time favourites to make, fried rice!! My boyfriends mother actually taught me how to make this, and I have adapted it to make it my own. Enjoy and give it a try yourself!!
Ingredients
- 1 cup Basmati Rice
- 4 Rashers Shortcut Bacon
- 2 Medium Carrots
- 1 cup of Peas
- 1 Small Can of Corn
- 2 Medium Eggs
- 2 Tablespoons of Kecap Manis
Serves: 4 | Preparation: 15 Minutes | Cooking time: 20 Minutes
First of, you will want to strain corn and place in a small bowl with the peas, as they need to be added at the same time, then peel and slice carrots, and place into a different bowl with the bacon that you have diced.
Before you start on the filling, start cooking the rice in your preferred method. Put a medium pot/saucepan into the heat, and once hot, add the carrots and bacon. While they are cooking, beat 2 eggs together, and cook into an omelet, and then dice, to be added to the mix a little later.
Once the bacon and carrots are almost done, add the corn, peas and diced omelet, and heat for a few more minutes. Now, add your cooked rice and stir through some kecap manis to give it a flavour boost.
Your fried rice is now done! The filling only takes about 15 minute to cook, so time that with the cooking of your rice so everything is finished at the same time :)
And that is how you make my special fried rice! You can add heaps of other stuff to it, like nuts and beans, but I like it just the way it is :) I also like pairing it with a salmon steak or some chicken skewers.
